Vanilla cupcakes with vanilla buttercream icing
Ingredients:
2 cups cake and pastry flour (sifted)
1 cup sugar
3/4 cup milk
1/2 cup butter (softened)
2 eggs
2 tsp baking powder
1 tsp vanilla extract
1/2 tsp salt
Vanilla buttercream frosting ingredients:
5 cups icing sugar (sifted)
1 cup butter (softened)
1/2 cup whipping cream
1/2 tsp vanilla
Directions:
For these homemade cupcake recipes, start off by first heating the oven to 375°F. Obtain a muffin baking pan that contains 12 muffin tins. Line the muffin tins with cupcake paper, or grease them with oil. Add the sifted flour, and sugar, baking powder, and salt to a large bowl. Whisk the contents together. Add in the milk, butter, eggs, and vanilla using an electric mixer at low speed. Then increase speed to high, and beat for 2 minutes. Mixture should be smooth.
Spoon the mixture into the muffin tins; fill up to 3/4 full. Place in the centre of the oven, and bake for 18 minutes. Check if cupcakes are ready by inserting a toothpick into the centre. If the toothpick comes out clean, cupcakes are ready. Remove from the oven, and let cool.
Frosting directions:
Add the butter into a large bowl. Beat until it becomes light and fluffy in texture. Add in the sugar, and cream, alternating between the two. Beat contents. Add in the vanilla. Blend contents well. Enjoy this delicious homemade cupcake recipes.
Note if you want to make the frosting ahead of time, it can be stored in the fridge for up to 1 day; let it cool to room temperature before spreading over the cupcakes
Hummingbird cupcake recipe
Makes 24 cupcakes
Ingredients:
3 cups flour
2 cups sugar
3/4 cup vegetable oil
1 cup of coarsely chopped walnuts, or pecans
3 eggs
1 (8 ounce) can of crushed pineapple (with liquid)
2 bananas (mashed)
1 tsp baking soda
1 tsp cinnamon
1 1/2 tsp vanilla extract
Salt as per taste
Directions:
For these homemade cupcake recipes, start off by first heating the oven to 350°F. Obtain 2 (12 tin) muffin baking pans, and line them with cupcake paper. In a large apparatus, mix together the flour, baking soda, cinnamon, sugar, and salt as per taste. Beat the eggs in a small bowl, and add in the vanilla, and oil. Stir contents together.
Add the egg mixture to the dry ingredient mixture, and blend contents well. In a separate bowl, mix together the pineapples, bananas, and walnuts/pecans. Add this mixture to the egg and flour mixture. Blend well. Ensure that ingredients are well combined.
Spoon batter into the muffin tins. Place in the oven, and bake for 25 minutes. Cupcakes should appear golden in colour. To check if they are ready, insert a toothpick into the centre of a cupcake. If the toothpick comes out clean, the cupcakes are ready. Remove from the oven, and let cool. Top with your favourite frosting, and enjoy this homemade cupcake recipes!
