Fried Garlic Rice Recipe

Makes 4 servings
Ingredients:
1 cup uncooked white rice
2 cups water
1 small onion (minced)
1 clove of garlic (minced)
1 tbsp lemon juice
1 tsp butter
Directions:
For this garlic rice recipe, cook the rice in a saucepan, as per package directions. Add the butter to a large skillet, and place it over medium-high heat. Add in the onion, and garlic. Cook contents, stirring often, until mixture appears lightly browned. Drain the water from the rice, and add it to the onion mixture. Stir contents until rice is coated. Cook until contents are thoroughly heated. Remove from heat, and add in the lemon juice. Blend well. Transfer onto serving plates, and enjoy!

Spinach and Feta Rice
Takes about 40 minutes to make
Makes about 6 servings
Ingredients:
3 cups chopped spinach
2 cups water
1 cup rice
1 cup sliced button mushrooms
4 ounces feta cheese (diced)
2 cloves of garlic (chopped)
1 red onion (chopped)
2 celery stalks (sliced)
Juice of 1/2 a lemon
1 tbsp butter
Cumin
oregano
salt and pepper
Directions:
Add the butter to a large saucepan. Add in the onion, mushrooms, garlic, and celery. Cook, and add in the lemon juice. Cook for 2 minutes. Add in the rice, and water. Bring contents to a boil. Cover saucepan with lid, and lower heat. Continue cooking until rice is tender. Remove from heat.
Add in the spinach. Cover saucepan, and let it sit for about 10 minutes. Add in the feta, salt, pepper, cumin, and oregano. Toss contents. Ensure that mixture is well blended. Transfer to serving dish, or serving plates. Enjoy!
Cilantro rice
Ingredients:
1 cup uncooked rice
2/3 cup cilantro (loosely packed)
1/3 cup of chopped onions
1/4 cup chopped green onions
1 jalapeno
1 tbsp lime juice
1 tsp oil
Add an extra jalapeno, or spices, if desired
Directions:
Cook rice as per package directions. Place all the ingredients, excluding the rice, into a blender. Blend well. When ready, place rice into a serving dish. Top with cilantro mixture, and stir contents together. Enjoy!
Onion Rice
Makes 6 servings
Ingredients:
1 cup long grain white rice
2 cups chicken broth
1 onion (chopped)
1 tbsp olive oil
1/2 tsp ground black pepper
For a vegetarian option, try using vegetable broth
Directions:
Add the oil to a large saucepan, and place it over medium heat. Add in the onion, and cook until onion appears tender. Add in the rice, and cook for a few more minutes, until rice appears coated with oil. Stir well. When rice begins to brown, add in the chicken broth, and ground pepper. Lower the heat, and simmer contents for about 20 minutes. Transfer onto serving dishes. Enjoy!
