Baked Chicken Recipe

If you need a baked chicken recipe that cooks easily in the oven, this recipe is perfect for you. Chicken curry puffs make a great addition to any meal, and are highly suitable as appetizers. If you want to use them for a complete meal, simply add some rice and a salad.

Baked Chicken Recipe: Chicken Curry Puffs

This recipe takes 30 minutes to prepare
Cooking time is about 50 minutes
Serves about 6

Ingredients:

• 1 (17.25) package of frozen puff pastry
• ¾ pound chicken breast (boneless and skinless)
• 2 chopped red onions
• 1 large potato (diced)
• 1 chilli pepper (chopped)
• ½ cup coconut milk
• 1 stalk of lemon grass (chopped)
• 1 tbsp oil
• 2 tsp curry powder
• ½ tsp ground turmeric, coriander, and cumin
• 1 tsp salt

Make sure to thaw the package of frozen puff pastry before starting

Directions:

To begin this baked chicken recipe, you must first cut the chicken breast into smaller pieces for eating. Then obtain a saucepan, and fill it with the oil. Place the pan on medium heat over stovetop. Spoon in the spices along with the curry, and cook for 4 seconds. You should be able to smell the mixture.

Add in the onions, chilli pepper, milk, and lemon grass. Cook contents for about 8 minutes. They should become soft. Add in the potatoes. Cook for 12 more minutes. Add more milk if the mixture is not moist or overly dry. Place the chicken into the mixture, and continue cooking. Stir occasionally. Sprinkle some salt into the mixture. Remove the pan from the stovetop when the liquid is almost completely dissolved.  Transfer the contents onto a plate.

Prepare two cookie sheets for baking by lining them with waxed paper and heat oven at 375°F. Place the puff pastry onto a clean working surface. Roll out each sheet, and use a knife to divide them up into 9 mini squares. Now you must spoon the chicken mixture into each square’s centre. Close the pastry puffs by lifting all 4 corners and bringing them together. Make sure that you pinch the top to close each packet so that the contents do not spill out. Place the packets onto the cookie sheets, leaving at least 1 inch between each.

To finish off your baked chicken recipe, place the cookie sheets into the oven. Remove after baking for about 22 to 25 minutes. Check that the puffs appear golden in colour before taking them out of the oven. Allow the puffs to cool for at least 12 minutes on the cookie sheets. Then transfer them onto a serving plate or wire rack for further cooling. Serve immediately with your favourite sauces. Enjoy!
